Tarakihi is the culinary staple all around New Zealand’s coastlines – readily available and offering a easily manageable fillet size, excellent taste and delicate flakes. Tarakihi responds well to fast cooking methods which wont result in overcooking and drying out of the flesh. It also makes a superb option for kokoda, ceviche and as a raw sashimi or sushi dish with its firm bite and translucent appearance.
Tarakihi fillet is smaller to medium sized, with a flatter profile (similar to snapper) and a smaller flake size once cooked.
