New Zealand is blessed with an abundance of amazing flatfish species – and brill is one of our top offerings. Found a little deeper than our traditional sand flounder, brill also grows larger and therefore can offer a thicker and meatier fillet – not unlike turbot.
Apricot coloured before cooking, brill fillet is sweet and delicate and will whiten well on cooking. It’s moist and tasty and like all flatfish has good availability from our Westcoast fishery.
