Bluenose – our General Manager’s pick – is another deepwater premium species, similar in profile and flavour to hapuka/groper. An exceptional fillet with large, robust flakes and a tasty fatty flesh that chefs and home-cooks savor. The fillets will be larger in depth and width, as bluenose has a stout ‘rugby ball’ shape and deep flanks.
You will find bluenose a winner for searing, roasting, crumbing, Asian cuisine and even delicate dishes that call for a sturdy texture and a very ‘white’ finish once cooked.
